Ingredients
Scale
- 1 lb peaches, pitted and diced
- 3/4 cup water
- 6 tbsp tomato paste
- 1/4 cup apple cider vinegar
- 2 adobo chipotle peppers en adobo + 1 tbsp sauce
- 2 tbsp extra virgin olive oil
- 2 minced garlic cloves (may sub 2 tbsp garlic-infused olive oil for the garlic + olive oil above)
- 2 tbsp honey
- 1 tbsp brown sugar (may sub for 1 tbsp coconut sugar)
- 1 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions
- Combine all of the ingredients in a medium pot over medium heat, stirring to combine.
- Allow mixture to come to a low boil, stirring often to stew the peaches down for about 5 minutes.
