Description

This Ham, Apple, and Potato Frittata with Gruyère is a delightful blend of golden potatoes, savory ham, sweet apples, and fluffy, protein-rich eggs all crowned with creamy Gruyère. It's an easy, one-skillet brunch dish—ideal for the weekend and equally delightful reheated for effortless meal prep during the week.


Ingredients

  • 2 tbsp unsalted butter
  • 2 tbsp canola oil or avocado oil
  • 1 lb diced gold potatoes or hashbrowns (frozen or fresh)
  • 200 g (1 large) apple, diced (I prefer Honeycrisp or Granny Smith)
  • 12 oz ham, diced
  • 80 g (1 cup) green onions, chopped
  • 12 eggs
  • 1 tbsp fresh chives, minced, or 1 tsp dried chives
  • 1 ½ tsp fresh sage, minced or ½ tsp dried sage
  • 1 ½ tsp kosher salt
  • ¾ tsp cracked black pepper
  • ⅛ tsp nutmeg
  • 6 oz (1 ½ cup) Gruyere cheese, shredded

Instructions

  1. Preheat oven to 375 degrees Fahrenheit / 190 degrees Celcius.
  2. In a large oven-proof skillet over medium-high heat melt butter and oil.
  3. Once hot and shimmering, add the diced potatoes (or hashbrowns) and apple. Saute until potatoes are lightly golden.
  4. Add the diced ham and green onions to the skillet. Sauté until ham is slightly caramelized and potatoes are tender.
  5. In a large bowl, whisk the eggs until fluffy. Add chives, sage, kosher salt, black pepper, and nutmeg and whisk until evenly combined.
  6. Use a spatula to evenly distribute the potato-apple-ham mixture in the skillet, then sprinkle the shredded Gruyere cheese evenly over the top.
  7. Pour the whisked egg mixture evenly over the top.
  8. Transfer skillet to preheated oven and bake for 25 minutes. Frittata is done when the center is just set but still slightly jiggly. Allow frittata to rest for 5 minutes before slicing to finish setting up. Serve warm and enjoy!
