The History and Origins of Romesco Sauce

Traditional Romesco Sauce hails from the Catalonia region of Spain, where it has been a beloved staple for centuries. Traditionally, it was created by fishermen to accompany their freshly caught seafood, blending ingredients like roasted red bixto peppers, tomatoes, olive oil, nuts, and garlic to craft a rich and flavorful sauce. Over time, Romesco has evolved and spread beyond its coastal roots, becoming a versatile condiment that pairs well with a variety of dishes. Today, it's celebrated not only for its deep, smoky flavor but also for its ability to enhance everything from grilled meats to roasted vegetables.

Ingredients Needed to Make Romesco Sauce

To make this flavorful and easy Romesco Sauce, you’ll need a handful of simple ingredients that bring out its rich, smoky taste. Here’s what you’ll need:

    • Fire-Roasted Red Peppers: These provide the smoky, slightly sweet base of the sauce. They are easy to find at most grocery stores down the olive aisle and offer a sweet and smoky flavor to the sauce. You'll want to use a whole 16 oz jar for this recipe—around 12 oz after draining the liquid.
    • Canned Whole Tomatoes: I prefer using fire-roasted canned whole tomatoes for their savoriness, acidity, and maximum smokiness, but regular canned whole tomatoes work just as well if that’s what you have on hand.
    • Almonds: Though you can use raw almonds, I prefer using roasted almonds, which offer a slightly toasted flavor that enhances the sauce. Alternatively, roasted hazelnuts also work beautifully in this recipe if you prefer their nutty sweetness.
    • Olive Oil: A staple in Mediterranean cuisine, this helps blend the ingredients together while adding a silky finish.
    • Garlic: You can use fresh cloves of garlic, substitute the olive oil in this recipe with garlic-infused olive oil if desired, or use garlic powder for a longer storage time. (Fresh garlic should not be stored in oil for longer than 2-3 days max even when refrigerated).
    • Italian Parsley: Also known as ‘flat-leaf’ parsley, this herb adds a fresh, slightly peppery note that brightens up the sauce.
    • Apple Cider Vinegar: This vinegar adds acidity that balances the richness of the nuts and oil. You can also substitute for red wine vinegar if you prefer.
    • Lemon Zest and Juice: This recipe uses both zest and juice to add brightness and acidity to the sauce. A citrus zester and juicer are well-used tools in my kitchen.
    • Smoked Paprika: This spice provides an extra layer of smokiness, complementing the roasted tomatoes and peppers and deepening the flavor profile.
    • Cayenne Pepper: This optional ingredient adds a subtle kick of heat to the sauce. Feel free to adjust the amount to suit your heat preference.
    • Kosher Salt: Good salt can make a world of difference in any dish. I use Diamond Crystal Kosher salt, but sea salt is also a great option if that’s what you prefer.
    • Cracked Black Pepper: Freshly cracked black pepper adds a mild bite that enhances the overall flavor of the sauce.

How To Make Easy 5-Minute Romesco Sauce Recipe

Making this smoky red pepper sauce at home is easier than you might think. Here’s how to quickly make easy Romesco Sauce at home in minutes:

    • Gather Your Ingredients: Start by preparing all the ingredients, making sure to drain the roasted red peppers.
    • Blend Everything Together: Add the drained roasted red peppers, canned whole tomatoes, roasted almonds, garlic, parsley, olive oil, apple cider vinegar, lemon zest and juice, smoked paprika, kosher salt, black pepper, and cayenne pepper (if using) into a food processor or high-powered blender.
    • Pulse to Desired Consistency: Pulse the mixture until it reaches your preferred texture. For a chunkier sauce, pulse lightly, leaving some texture. For a smoother sauce, blend until the mixture is creamy.
    • Taste and Adjust: Taste the sauce and adjust the seasoning as needed. You can add more salt, lemon juice, or cayenne pepper to suit your taste. If you prefer a thicker sauce, blend in more almonds. For a thinner consistency, drizzle in a bit more olive oil or a splash of water until you reach your desired texture.
    • Serve or Store: Use the sauce immediately or transfer it to an airtight container. If you've used fresh garlic, store it in the refrigerator for 2-3 days to ensure safety. If you used garlic-infused olive oil or garlic powder, the sauce can be stored for up to 7-10 days.

Romesco Sauce Variations and Ingredient Substitutions

Romesco Sauce is incredibly versatile, and there are plenty of ways to customize it to suit your taste or what you have on hand:

    • The Best Nuts for Romesco: While almonds are traditional, you can substitute them with hazelnuts for a sweeter, nuttier flavor, pine nuts for a rich, buttery taste, or even walnuts for a richer, earthier profile.
    • Peppers: If you want a different twist, try using a mix of roasted red peppers and roasted piquillo peppers for a slightly spicier kick.
    • Vinegar: Apple cider vinegar brings a nice balance of acidity, but red wine vinegar or sherry vinegar can also be used for a slightly different flavor profile.
    • Adjust the Heat: For a milder red pepper sauce, reduce or omit the cayenne pepper. If you prefer a bit more heat, consider adding a bit more cayenne, or a pinch of red pepper flakes or smoked chili powder.
    • Herbs: While flat-leaf parsley is the classic choice, you can experiment with fresh cilantro or basil for a different herbal note.
    • Garlic: For a mellow caramelized garlic flavor, try roasting the garlic before adding it to the sauce. Alternatively, for a longer storage life consider using garlic-infused olive oil or garlic powder.
    • Consistency: If you prefer a thicker sauce, add more nuts or a measure of toasted breadcrumbs. For a thinner consistency, drizzle in more olive oil or a splash of water.

Delicious Ways to Use Romesco Sauce

Romesco is an incredibly versatile sauce that enhances a wide range of dishes with its rich, smoky flavor. Whether you're looking to add a burst of flavor to vegetables, meats, or even plant-based options, Romesco is the perfect companion. Here are some of my favorite ways to use this smoky sauce:

    • Sheet Pan Dinners: Drizzle Romesco over your favorite sheet pan meals to add a burst of flavor.
    • Grilled and Roasted Vegetables: Drizzle Romesco over grilled asparagus, roasted cauliflower, smashed potatoes, or charred Brussels sprouts for an extra layer of flavor. Try this Crispy Cauliflower with Romesco and Feta or this Roasted Delicata Squash and Broccolini with Romesco!
    • Seafood: Serve it alongside grilled fish, shrimp, or scallops to complement the natural sweetness of the seafood. Try it in this Shrimp with Romesco Sauce and White Beans!
    • Chicken: Use Romesco as a sauce for roasted or grilled chicken, or liven up store-bought rotisserie chicken for an elevated shortcut.
    • Pork: Pair Romesco with pork chops, tenderloin, or roasted pork shoulder for a savory and smoky finish.
    • Beef: Serve Romesco as a savory steak sauce or use it as a dipping sauce for grilled beef skewers. Try it with this Marinated Skirt Steak!
    • Tofu: Toss crispy tofu cubes in Romesco or use it as a dipping sauce for other plant-based proteins.
    • Pasta: Romesco works beautifully in both hot and cold pasta dishes. Toss it with warm pasta for a quick, flavorful sauce, or mix it into a pasta salad for a tangy, no-cook option. Try it with this Pasta with Olive Tapenade!
    • Sandwiches and Wraps: Swap out your usual sandwich spreads like mayo or mustard for Romesco to add a smoky, tangy twist to your sandwiches and wraps.
    • Pizza: Use Romesco as a base sauce for pizza instead of traditional tomato sauce. It pairs perfectly with roasted vegetables, your favorite protein, and a sprinkle of goat cheese.
    • Egg Dishes: Add a dollop of Romesco to scrambled eggs, omelets, or frittatas for a smoky, tangy twist. Spread Romesco on toast and top it with a perfectly cooked egg, or add to a savory breakfast bowl with potatoes, greens, yogurt, and eggs for a spin on Turkish eggs.
a gold spoon resting in a dark green dish of Romesco Sauce with parsley on top

    Storing and Freezing Romesco Sauce

Storing: Romesco Sauce can be stored in an airtight container in the refrigerator. If you've used fresh garlic, it’s best to consume the sauce within 2-3 days to ensure safety. If you’ve used storebought garlic-infused olive oil or garlic powder, the sauce will keep for up to 7-10 days in the fridge.

Freezing: Romesco Sauce freezes well for longer storage. Transfer the sauce to a freezer-safe container or portion it out in ice cube trays for easy use. It can be stored in the freezer for up to 3 months. When you're ready to use it, thaw it in the refrigerator overnight or gently warm it on the stove before serving.

Absolutely in love with all the ways you've suggested using this good stuff. I love romesco, but I've mostly only ever used it with fish and in pasta. I'm pining for it drizzled over roasted veggies or swirled into pesto. Brilliant. And so quick and easy to whip up!
