Over time, Romesco has evolved and spread beyond its coastal roots, becoming a versatile condiment that pairs well with a variety of dishes. Today, it's celebrated not only for its deep, smoky flavor but also for its ability to enhance everything from grilled meats to roasted vegetables.

    To make this flavorful and easy Romesco Sauce, you’ll need a handful of simple ingredients that bring out its rich, smoky taste. Here’s what you’ll need:

    • Fire-Roasted Red Peppers: These provide the smoky, slightly sweet base of the sauce. They are easy to find at most grocery stores down the olive aisle and offer a sweet and smoky flavor to the sauce. You'll want to use a whole 16 oz jar for this recipe—around 12 oz after draining the liquid.
    • Canned Whole Tomatoes: I prefer using fire-roasted canned whole tomatoes for their savoriness, acidity, and maximum smokiness, but regular canned whole tomatoes work just as well if that’s what you have on hand.
    • Almonds: Though you can use raw almonds, I prefer using roasted almonds, which offer a slightly toasted flavor that enhances the sauce. Alternatively, roasted hazelnuts also work beautifully in this recipe if you prefer their nutty sweetness.
    • Olive Oil: A staple in Mediterranean cuisine, this helps blend the ingredients together while adding a silky finish.
    • Garlic: You can use fresh cloves of garlic, substitute the olive oil in this recipe with garlic-infused olive oil if desired, or use garlic powder for a longer storage time. (Fresh garlic should not be stored in oil for longer than 2-3 days max even when refrigerated).
    • Italian Parsley: Also known as ‘flat-leaf’ parsley, this herb adds a fresh, slightly peppery note that brightens up the sauce.

    Making this smoky red pepper sauce at home is easier than you might think. Here’s how to quickly make easy Romesco Sauce at home in minutes:

    • Gather Your Ingredients: Start by preparing all the ingredients, making sure to drain the roasted red peppers.
    • Blend Everything Together: Add the drained roasted red peppers, canned whole tomatoes, roasted almonds, garlic, parsley, olive oil, apple cider vinegar, lemon zest and juice, smoked paprika, kosher salt, black pepper, and cayenne pepper (if using) into a food processor or high-powered blender.
    • Pulse to Desired Consistency: Pulse the mixture until it reaches your preferred texture. For a chunkier sauce, pulse lightly, leaving some texture. For a smoother sauce, blend until the mixture is creamy.
    • Taste and Adjust: Taste the sauce and adjust the seasoning as needed. You can add more salt, lemon juice, or cayenne pepper to suit your taste. If you prefer a thicker sauce, blend in more almonds. For a thinner consistency, drizzle in a bit more olive oil or a splash of water until you reach your desired texture.
    • Serve or Store: Use the sauce immediately or transfer it to an airtight container. If you've used fresh garlic, store it in the refrigerator for 2-3 days to ensure safety. If you used garlic-infused olive oil or garlic powder, the sauce can be stored for up to 7-10 days.

    This easy Romesco Sauce is a quick and delicious way to elevate the flavor of your meals without spending extra time in the kitchen.     Ingredients

    • 16 oz jar fire-roasted red peppers, drained (12 oz without liquid)
    • 6 (1 ½ cups or 341 g) whole fire-roasted canned tomatoes
    • 157 g (1 cup) unsalted roasted almonds (or roasted hazelnuts)
    • 3 tbsp olive oil
    • 3 cloves garlic*
    • 15 g (¼ cup) Italian flat-leaf parsley
    • 1 tbsp apple cider vinegar (or red wine vinegar)
    • zest and juice of 1 lemon (about 1 tablespoon zest + 3 tablespoon lemon juice)
    • 1 ½ tsp smoked paprika
    • ½ tsp Kosher salt
    • ½ tsp cracked black pepper
    • ¼ tsp cayenne pepper


    Instructions

    1. Add all ingredients to your food processor or high-powered blender.
    2. Pulse until the mixture reaches your desired level of smoothness. For a chunkier texture, pulse lightly, or blend until smooth and creamy if you prefer.
    3. Use the sauce immediately, or store any leftovers in an airtight container in the refrigerator.

      Absolutely in love with all the ways you've suggested using this good stuff. I love romesco, but I've mostly only ever used it with fish and in pasta. I'm pining for it drizzled over roasted veggies or swirled into pesto. Brilliant. And so quick and easy to whip up!

      So many tasty ways to enjoy this romesco sauce including a low carb pizza crust that I use often. Boy, this is going to take pizza to a whole new tasty level! Have you tried freezing the sauce? It would be nice to have this ready to go in 1/2 cup portions.
