- Feta - I prefer to use Greek block style feta in brine, but you can use whatever is easily accessible to you.
- Unsalted butter - I like to start with unsalted butter so I canbetter control the salt level in this dish. You'll be adding salt directly to the compound butter and be adding salty feta to the top as well.
- Fresh parsley
- Fresh dill
- Fresh chives
- Fresh oregano
- Lemon zest - Adds a lovely bright flavor that compliments the flavor of the salmon and herbs and cuts through the added richness of the feta cheese.
- Garlic powder - I prefer to use garlic powder for ease of use, but you can easily substitute fresh minced garlic if you have it on hand.
- Kosher salt - Diamond Crystal Kosher salt is a staple in my pantry.

This Greek-inspired Roasted Salmon with Feta and Herbs recipe is perfect for any occasion. Ingredients
For the compound butter:
- 4 tbsp (57 g) unsalted butter, softened
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh chives, finely chopped
- 2 tsp fresh oregano, finely chopped
- Zest of 1 lemon, divided
- ¼ tsp garlic powder (may sub for 2 cloves minced garlic)
- ½ tsp kosher salt
- ¼ tsp cracked black pepper
For the rest of the dish:
- 1 ½ lb salmon filet, deboned and patted dry
- 6 oz Greek block feta, drained of brine and crumbled
- Optional: Additional chopped parsley, dill, chives, as desired
Instructions
- Preheat the oven to 425 degrees Fahrenheit / 220 degrees Celcius. You should have one oven rack positioned in the center of the oven, and (if you have a second rack) the second in the top position under the broiler. Line a baker's half-sheet pan with parchment paper and reserve it to the side.
- Prepare the compound butter: In a medium bowl combine the softened butter, chopped parsley, dill, chives, chopped oregano, about 2 teaspoon of the lemon zest (reserving the remaining teaspoon of lemon zest to the side for later), garlic, salt, and pepper. Using a fork or spatula, thoroughly mix all the ingredients together until well combined and reserve to the side.
- Season the salmon: Transfer the salmon to the reserved parchment-lined baking sheet. Using a silicone spatula, spread the compound butter over the top of the salmon until it is evenly coated.
- Cook the salmon: Roast the salmon in the middle rack for 15 minutes or until the salmon has reached about 135 degrees Fahrenheit / 57 degrees Celcius, which can be tested with a meat thermometer, then remove from heat.
- Change your oven temperature to broil on high. Make sure that you have an oven rack in the top position under the broiler.
- Top the salmon with crumbled feta, and return to the oven on the top rack to broil for 2-5 minutes or until the feta is lightly golden and the internal temperature of the fish has reached 145 degrees Fahrenheit / 63 degrees Celcius.
- Finish and enjoy! Top with additional fresh parsley, dill, chives, and remaining lemon zest. Serve warm with sides of your choice; My favorite accompaniments are roasted asparagus and fluffy rice.

Just made this for dinner tonight after getting it in the newsletter today and having zero dinner plans and OMG!! So good!! I served it with couscous, carrots, asparagus, and a baguette. I did adjust the recipe a bit and added almost a tablespoon of chives to the compound butter and I felt it added a lot, but know that’s not everybody’s cup of tea. I would make this again - I’m actually already planning to serve it to my in-laws next time they come for dinner (it’s just that good). This is my marry me dish.
