This Peach, Prosciutto, and Burrata Salad is one of our favorite summer dishes to serve on a warm night. This salad comes together in a matter of minutes and requires no cooking!
What ingredients do I need to make this Peach, Prosciutto, and Burrata Salad?
- Fresh peaches, pitted and sliced - I prefer yellow peaches for this salad, but you can also use white peaches or nectarines if you prefer.
- 2 oz prosciutto - I love to wrap prosciutto directly around the slices of peaches so you can enjoy the savory saltiness of the meat in each bite, but you can arrange on the plate separately if you prefer.
- 8 oz burrata cheese (about 4 medium balls) - I love the medium-size burrata balls for this salad because they are the perfect size when torn in half for each person to grab one or two of.
- Olive oil, to taste - This is the dish that you'll want to break out your fancy olive oil for as it will be prominently featured and enjoyed
- Balsamic vinegar, to taste (optional) - I list balsamic vinegar as optional, but I almost never omit it myself because it adds a lovely tart and rich sweetness that pairs so well with this dish
- Fresh basil - If you don't have fresh basil, this dish is also lovely with fresh mint, dill, or nasturtium
- Cracked black pepper, to taste
- Flaky sea salt, to taste - I love this kind.
What to serve with this fruit and cheese salad?
We love to serve this salad with freshly sliced sourdough baguette, croccantini crackers, or simply on its own. If you want to make this dish a heartier first course, you can also serve it over fresh garden greens, like spinach or butter lettuce, with an extra drizzle of olive oil and vinegar.
I think this Peach, Prosciutto, and Burrata Salad is superb served as a first course before simply grilled chicken and fish or one of these main courses:
- Pizza Bianca
- Pasta with Olive Tapenade
- Roasted Salmon with Feta and Herbs
