A Lemon Ice Pop may be used by the Dursleys as a slight to their nephew Harry, but in my world, this sweet and refreshing dessert is a welcome treat. I always look forward to pulling one of these icy lemon treats out of the freezer on a hot day and love that they come together with a magical 3 ingredients and no refined sugar. These Harry Potter-inspired Lemon Ice Pops can be prepped in 10 minutes or less so you only need to wait for them to freeze before you enjoy.
Simple magic: Lemons, Honey, Water
When I first started creating this recipe, my plans were a bit too grand. I wanted to add ginger, coconut milk, or elderflower blossoms. What if I used lemon curd as a base? I was overworking something that was intended to be simple. The book made it clear it was supposed to be a cheap Lemon Ice Pop you'd find at the zoo, not a bougie Lemon Ice Pop. As much as I love a good bougie treat, I wanted to keep these as simple as possible, meaning minimal ingredients. If you have lemons, honey, and water you can make this recipe happen in any popsicle mold.
WHAT TOOLS DO I NEED TO MAKE THIS RECIPE?
- A cutting board
- A chefs knife or citrus knife
- A citrus juicer
- A small saucepan
- Measuring cups and Measuring spoons
- A spoon or spatula for stirring
- A drinks pitcher or spouted mixing bowl
- Ice pop mold + popsicle sticks

Paleo Lemon Ice Pops

Description
These Harry Potter-inspired Lemon Ice Pops come together with a magical 3 ingredients and can be prepped in 10 minutes before freezing. These are a sweet and refreshing treat best enjoyed on a warm summer day.
Instructions
- In a small saucepan, add the honey and 1 cup of water and stir to combine. Bring to a boil for a full minute.
- In a large pitcher or spouted mixing bowl, add the honey mixture, lemon, and remaining water. Stir to combine.
- Pour lemonade into ice pop molds and freeze for atleast 4 hours.
