    Spiced Peach Crumble Bars (Gluten-Free & Refined Sugar-Free)

    The perfect summer to fall segue

    Now that fall is just around the corner, one of my favorite ways to take advantage of the tail end of summer stonefruit season is to make these delicious Spiced Peach Crumble Bars. These cozy beauties are loaded with Spiced Peach Butter and are the perfect segue from warm fall temps to chillier days curled up with hot teapots and plenty of good books.

    Simple ingredients, share-worthy results

    I recently made a batch of these, immediately ate 2 standing over the kitchen sink, then wrapped up ⅔rds of the batch and walked them over to the neighbor's house so I wouldn't devour the whole lot. I immediately regretted dropping them at the neighbors (because I wanted to eat the whole lot) and then pined for them until I got around to making another batch. They're that good!

    These bars are incredibly easy to make gluten-free and refined sugar-free with a base of almond flour, gluten-free rolled oats, and coconut sugar. A little baking powder to leaven, nutmeg + cinnamon + sea salt to spice, and butter to hold everything together and you've got a delicious short-bread-like crust. Add a layer of creamy Spiced Peach Butter and finish with a crumble of the same shortbread mixed with a healthy sprinkle of almonds and you're in business.

    They're simple. They're delicious. Make a double batch if you're going to share them with the neighbors.

    How to serve these Spiced Peach Crumble Bars

    I prefer to serve these fresh from the oven, but they are also delicious cold out of the fridge! Warm leftovers up with a quick nuke in the microwave - about 30 seconds will have an individual bar piping hot again. If you want to make them extra decadent, they are lovely served with a dollop of fresh whipped cream or a scoop of vanilla ice cream as well.

    Storage

    Store any leftovers (what are those?) in the refrigerator for up to 4 days or in the freezer for 1 month. I like to pop mine right into these airtight glass storage containers. Find these and other Whip & Wander kitchen favorites in my shop page.

    Description

    Now that fall is just around the corner, one of my favorite ways to take advantage of the tail end of summer stonefruit season is to make these delicious Spiced Peach Crumble Bars. These cozy beauties are loaded with Spiced Peach Butter and are the perfect segue from warm fall temps to chillier days curled up with hot teapots and plenty of good books.


    Ingredients

    Scale
    • 1 ⅓ cups gluten-free rolled oats
    • 1 cup almond flour
    • ⅓ cup coconut sugar
    • ½ cup unsalted butter, melted
    • ¾ tsp baking powder
    • ¾ tsp ground cinnamon
    • ½ tsp ground nutmeg
    • ½ tsp sea salt
    • ¼ cup sliced almonds
    • 1 ½ cups Spiced Peach Butter

    Instructions

    1. Preheat oven to 350 degrees F (176 C). Line an 8x8 baking dish with parchment paper so that it reaches slightly past the edge of the dish. This will make the bars easier to lift out of the pan later.
    2. In a medium bowl, combine oats, almond flour, coconut sugar, melted butter, baking powder, cinnamon, nutmeg, and sea salt together by hand until well-combined.
    3. Press ⅔ of the mixture into the parchment-lined baking dish, pressing firmly by hand to create a shortbread-like crust.
    4. Bake crust for 15 minutes or until it just begins to turn slightly golden.
    5. Add the Spiced Peach Butter to the top of the crust, gently spreading it until even.
    6. Top with the remaining shortbread crust, crumbling it over the top of the Spiced Peach Butter layer. You should still see pockets of peach butter peeking through the top.
    7. Sprinkle the top with the sliced almonds.
    8. Bake for an additional 25-30 minutes or until the top of the crumble begins to turn slightly golden.
    9. Allow to cool fully before removing from the pan. Slice into 9 equal squares. These are superb eaten fresh from the oven or fridge cold with a dollop of whipped cream or vanilla ice cream. Store the leftovers in the refridgerator. I think they're best within the first 4 days.

      I cannot wait for my peach trees to have fruit on them - until then this recipe will be perfect for the leftover peaches that we have when we get a big bag and the kids eat too many and then get fed up with them! They will happily munch these down, and great for lunches for big and little kids.

      Wow these look absolutely delicious. As I'm in the UK and it's not peach season, I'm wondering if I could substitute it with something else, perhaps blackberries would work! YUM going to give it a try!

      These are so perfectly chewy and gooey! Honestly when you make from-scratch bars like this, there is NO going back to store bought. It's impossible. Love the peaches in this and can't wait to give it a whirl with apples this fall!
